Beef Minestrone

1 lb ground beef (lean)
2 tbsp olive oil
1 medium chopped onion
1 can diced tomatoes (petite cut is best)
2 diced raw potatoes
2 medium carrots, sliced
1 cup diced celery and leaves
1 cup slivered cabbage
1/4 cup rice
1/2 tsp thyme and basil
1 bay leaf
salt and pepper to taste
2 quarts of water (or more if needed)
Cook beef and onion in a large kettle (in oil) until lightly browned,
breaking up meat with fork.
Add remaining ingredients. Bring to a boil and reduce to a
simmer, covered, for 1 hour.
Serve as a main dish with grated parmesan cheese, if desired.
