Dijon
Vinaigrette

1/2 cup white vinegar
Tbsp. lemon juice
Approx. 1 1/2 tbsp. sugar
1 to 2 cloves pressed garlic
Tsp. Dijon mustard
1/2 tsp fresh basil
approx. 1/4 cup olive oil
Salt and pepper
Start with the vinegar, lemon juice and garlic in a mixing bowl. Add
sugar and whisk until the sweet/sour balance is correct. Whisk in
mustard, and basil. Salt and pepper to taste. Drizzle olive oil very
slowly while whisking vigorously. Use immediately or shake before next
use.
