Yorkshire Pudding
By Mandy and Tom Smith

“Serve with Roast Beef, any cut that you prefer – cooked to your choice.  We also use steaks at times.  The roast gives you gravy needed for the pudding, but you can buy a packet of gravy mix at the market.”

2 scant cups of flour
4 eggs
2 cups of whole milk

Beat eggs in bowl with fork.  Add milk (It needs whole milk.).  Add flour.  Let sit for 1/2 hour to one hour in bowl on counter.  Preheat over to 400 degrees for 15 minutes.  (It is best to make in 9 inch iron frying pan.)  Pour in batter and cook for 45 minutes or until pudding rises like a souffle and is brown.  Cut in wedges and serve with meat and gravy.  Enjoy!
