Sweet Potatoes

5 lbs cooked sweet potatoes – fresh and mashed
1 1/4 tsp vanilla
1/2 cup sugar
2 eggs – add when potatoes are cooler
3/4 stick margarine or butter
Mix all ingredients together and put in a 13x9” baking pan. Top
with:
1 stick of butter
1/2 cup of flour
1 cup brown sugar
1 cup walnuts
Crumble together. Bake at 325 degrees for 1 hour or until the top
is bubbly.
