Zucchini Muffins

3 eggs beaten
2 cups of sugar
1 cup of salad oil
3/4 tsp soda
1 tsp salt
1 tsp cinnamon
2 cups of flour
1 cup of quick oats
1tsp vanilla
1/4 tsp baking soda
1 cup of chopped nuts
2 cups of finely grated zucchini

Mix all ingredients and pour into greased muffin tins.  Bake at 350 degrees for 20-25 minutes.  Makes 20-24 muffins.
